Bajan seasoning

Ingredients

  • 185g green topped spring onions
  • 1 head of garlic
  • 500g Spanish onion
  • 4 sprigs fresh thyme
  • 4 sprigs fresh marjoram
  • Handful fresh parsley
  • Handful fresh basil
  • 1 tbsp curry
  • 1 tbsp salt
  • 1 tbsp celery salt
  • 1 tbsp paprika
  • 2 tbsp fresh ground black pepper
  • 1/2 tsp ground cloves
  • 1 very hot red pepper / 3 chili peppers / 2 tbsp red pepper sauce

Instructions

  1. Chop up the spring onion
  2. Peel and chop the Spanish onions
  3. Peel the garlic
  4. Pick leaves from stems
  5. Place everything in a food processor, blitz for 5 minutes
  6. Store in two 300 ml jars, in the fridge
